Yellow tea is one of the rarest varieties of tea in the world, a precious commodity of China, that only 100 or so teamasters know how to process. Through a complicated process of heavy duty steaming, fermentation, and light oxidation, the result is a smooth, sultry, ambrosia of the tea world. Brilliantly fruity, devoid of bitterness if made properly, this tea is for the serious tea heads. Make sure to steep this one several times!
