House Masala Chai — Indian-Spiced Kenyan Black

- Use 20g (≈3 tbsp) of leaf per ½ liter (≈17 oz).
- Steep 7+ minutes in a mix of ¼ liter (≈8 oz) boiling water and ¼ liter (≈8 oz) hot milk (we recommend whole milk).
- Strain leaves, add sugar if you like (1 tsp is what we suggest), and enjoy!
Wanna make this one straight-up? Masala chai is designed to be steeped in warm milk (or a milk alternative) to draw all the flavors out of the blend, but hey, we're not your boss, do what you want. Here's instructions to do it straight.
- Use 7g (≈1 tbsp) of leaf per ½ liter (≈17 oz) of water.
- Use boiling (90°C/195°F) water
- Steep for 3 minutes, strain leaves, and enjoy!
- If you make this straight-up, don't forget to try for multiple infusions! Just add time to each steep.
- For under 2:00 steep times, add 30 sec.
- For 2:00 to 4:00, add 1 minute.
- For over 4:00, add 2 minutes or more.
- Want just a little milk in your tea, rather than just a full latte? Steep an extra couple minute!
- Too strong? Take off a minute, or use less leaf instead!
- Too light? Kick it up another minute, or use more leaf instead!
